Description

A delightful twist on the classic Italian rice ball, bursting with creamy pumpkin and savory Parmesan, perfect as an appetizer or snack.


Ingredients

Scale
  • 2 cups cooked Arborio rice
  • 1 cup pumpkin puree
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/2 cup all-purpose flour
  • 1 cup breadcrumbs
  • Salt to taste
  • Pepper to taste
  • Oil for frying

Instructions

  1. In a bowl, mix the cooked Arborio rice, pumpkin puree, Parmesan cheese, egg, salt, and pepper until well combined.
  2. Form the mixture into balls, about the size of a golf ball.
  3. Roll each ball in flour, then dip in beaten egg, and finally coat with breadcrumbs.
  4. Heat oil in a deep pan over medium heat.
  5. Fry the arancini until golden brown and crispy.
  6. Remove from oil and drain on paper towels.
  7. Serve warm, garnished with extra Parmesan if desired.

Notes

Use fresh pumpkin puree for the best flavor. Can be prepared a day in advance and frozen as needed.
