- 1 egg

Instructions
- In a bowl, mix the cooked Arborio rice, pumpkin puree, Parmesan cheese, egg, salt, and pepper until well combined.
- Form the mixture into balls, about the size of a golf ball.
- Roll each ball in flour, then dip in beaten egg, and finally coat with breadcrumbs.
- Heat oil in a deep pan over medium heat.
- Fry the arancini until golden brown and crispy.
- Remove from oil and drain on paper towels. Serve warm, garnished with extra Parmesan if desired.
