- 1 head of cauliflower, grated into rice
- 1 cup feta cheese, crumbled
- 1/2 red onion, diced
- 2 tablespoons olive oil
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
- Optional: grilled chicken for protein
Instructions
- In a skillet, heat olive oil over medium heat.
- Add the grated cauliflower and sauté for about 5-7 minutes until tender.
- Remove from heat and stir in dill, feta cheese, and red onion.
- Season with salt and pepper to taste.
- Serve warm and add grilled chicken if desired.
Notes
For extra crunch, serve with sliced cucumber or cherry tomatoes and a squeeze of lemon.
