Description

A simple, tasty weeknight meal that combines the flavors of tacos in a delicious pie.


Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 taco seasoning packet
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 3 eggs
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Optional toppings: sour cream, salsa, chopped green onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef, onion, and bell pepper in a skillet over medium heat until the beef is browned and the vegetables are soft. Drain excess fat.
  3. Stir in the taco seasoning and cook for another 2 minutes.
  4. Whisk together the eggs, heavy cream, salt, and pepper in a bowl.
  5. Spread the beef mixture evenly in a greased pie dish. Pour the egg mixture over the top.
  6. Sprinkle cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the egg is set and the top is golden.
  8. Cool for a few minutes before slicing. Serve with optional toppings.

Notes

Drain fat from the beef for a less greasy pie. Use a nonstick or greased pie dish for easier serving.
