A simple, tasty weeknight meal that combines the flavors of tacos in a delicious pie.

- 1 pound ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 1 taco seasoning packet
- 1 cup shredded cheese (cheddar or Mexican blend)
- 3 eggs
- 1/2 cup heavy cream
- Salt and pepper to taste
- Optional toppings: sour cream, salsa, chopped green onions
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the ground beef, onion, and bell pepper in a skillet over medium heat until the beef is browned and the vegetables are soft. Drain excess fat.
- Stir in the taco seasoning and cook for another 2 minutes.
- Whisk together the eggs, heavy cream, salt, and pepper in a bowl.
- Spread the beef mixture evenly in a greased pie dish. Pour the egg mixture over the top.
- Sprinkle cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the egg is set and the top is golden.
- Cool for a few minutes before slicing. Serve with optional toppings.
Notes
Drain fat from the beef for a less greasy pie. Use a nonstick or greased pie dish for easier serving.
