Ingredients
Scale
- 1 tbsp olive oil
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup tomato sauce
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/4 tsp salt
- 1/4 cup chopped cilantro
Instructions
- Heat olive oil in a medium saucepan over medium heat. Add the rice and cook for 1-2 minutes, stirring occasionally, until the rice starts to turn slightly translucent.
- Add the chicken broth, tomato sauce, cumin, chili powder, and salt. Stir to combine everything.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until all the liquid is absorbed and the rice is cooked through.
- Once the rice is cooked, fluff it with a fork. Stir in the chopped cilantro. Serve immediately and enjoy the awesome flavors!
Notes
