Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the sugar and butter until smooth.
  3. Stir in the pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, pumpkin spice, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Drop spoonfuls of the batter onto a greased baking sheet.
