A warm, filling, and easy casserole made with ground beef, sliced potatoes, cheese, and a creamy soup, perfect for weeknight meals or entertaining guests.

- 1 pound ground beef
- 4 cups potatoes, peeled and sliced
- 1 onion, chopped
- 2 cups shredded cheddar cheese
- 1 can cream of mushroom soup
- 1 cup milk
- Salt and pepper to taste
- Cooking spray or oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook ground beef and onion over medium heat until browned; drain excess fat.
- In a large bowl, mix the cooked beef and onion with the cream of mushroom soup, milk, salt, and pepper.
- Spray a baking dish with cooking spray, then layer half of the sliced potatoes at the bottom.
- Pour half of the beef mixture over the potatoes, followed by half of the cheese.
- Repeat the layers with the remaining potatoes, beef mixture, and cheese.
- Cover with foil and bake for 1 hour.
- Remove the foil and bake for an additional 15-20 minutes until the potatoes are tender and the cheese is melted and bubbly.
Notes
Let the casserole rest for 5 to 10 minutes after baking. For variations, you can swap the cream of mushroom soup and use different cheeses.
