- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup almond milk
- 1/4 cup coconut oil, melted
- 1/2 cup coconut sugar
- 1 teaspoon cinnamon
- Cooking spray
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the whole wheat flour, baking powder, and salt.
- In another bowl, mix the almond milk, melted coconut oil, and coconut sugar until smooth.
- Combine the wet and dry ingredients until just mixed.
- Use a small cookie scoop to portion the dough onto the prepared baking sheet.
- Bake for 12-15 minutes or until golden brown.
- While the churro bites cool, mix the cinnamon and additional coconut sugar in a small bowl.
- Roll the churro bites in the cinnamon sugar mixture before serving.
Notes
Do not overmix the dough; mix until just combined for soft bites. For crisper bites, bake for an extra 1-2 minutes.
