Healthy Baked Churro Bites

Ingredients

  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup almond milk
  • 1/4 cup coconut oil, melted
  • 1/2 cup coconut sugar
  • 1 teaspoon cinnamon
  • Cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the whole wheat flour, baking powder, and salt.
  3. In another bowl, mix the almond milk, melted coconut oil, and coconut sugar until smooth.
  4. Combine the wet and dry ingredients until just mixed.
  5. Use a small cookie scoop to portion the dough onto the prepared baking sheet.
  6. Bake for 12-15 minutes or until golden brown.
  7. While the churro bites cool, mix the cinnamon and additional coconut sugar in a small bowl.
  8. Roll the churro bites in the cinnamon sugar mixture before serving.
  9. Enjoy!

Notes

Store any leftover churro bites in an airtight container at room temperature for up to two days. For longer storage, freeze them in a freezer-safe bag.
