Ingredients

- 1 small head of cabbage, chopped
- 2 cups cauliflower florets
- 1 lb chicken breasts, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth

- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, and sauté until softened.
- Add chopped chicken and cook until no longer pink.
- Stir in cabbage, cauliflower, and carrots, cooking for a few minutes.
- Pour in chicken broth, add thyme, salt, and pepper, and bring to a boil.
- Reduce heat and simmer for about 20-30 minutes until veggies are tender.
- Serve hot.
