Ingredients

  • 2 cups cooked chicken, shredded
  • 8 oz zoodles (zucchini noodles) or low-carb pasta
  • 1/4 cup Caesar dressing (low-carb)
  • 1/4 cup grated Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup romaine lettuce, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the zoodles or low-carb pasta according to package instructions. Drain and set aside.
  2. In a large bowl, combine the shredded chicken, cooked zoodles, and Caesar dressing. Mix well to incorporate.
  3. Add the cherry tomatoes and romaine lettuce to the chicken mixture, and gently toss everything together.
  4. Sprinkle with grated Parmesan cheese, then season with salt and pepper to taste.
  5. Serve immediately, garnishing with extra Parmesan if desired.

Notes
