A comforting and nutritious soup packed with lean protein, fiber, and vitamins, perfect for any family gathering or cozy night in.
Ingredients

- 2 Tbsp. olive oil
- 1 small red onion, chopped
- 3 garlic cloves, minced
- 4 cups chicken broth
- 2 (15 ounce) cans fire-roasted, diced tomatoes
- ¼ cup fresh cilantro, chopped
- 2 (15 ounce) cans black beans, rinsed and drained
- 1 can corn, drained
- 1 Tbsp. ground cumin, plus more to taste
- ½ teaspoon dried oregano
- 2 whole chicken breasts or 2–3 cups rotisserie chicken, chopped
- 2 cups Cabot Cheese (your favorite flavor)
- Salt and pepper to taste
- Cheese, red onion, cilantro, sour cream, salsa, avocado, tortilla chips (for topping)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add red onion and garlic, cooking for about 3 minutes until soft.
- Pour in chicken broth, diced tomatoes, cilantro, black beans, corn, cumin, and oregano. If using whole chicken breasts, add them as well.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Shred chicken and return it to the soup.
- Add Cabot cheese and cook for an additional 10 minutes, stirring until melted.
- Season with salt and pepper to taste.
- Ladle into bowls and top with cheese, onion, cilantro, sour cream, salsa, avocado, and tortilla chips. Serve hot.
Notes
For extra flavor, try adding a squeeze of lime juice just before serving. For a vegetarian version, omit the chicken and use vegetable broth.
