Healthy No-Bake Carrot Energy Bites

Delicious no-bake energy bites made with healthy ingredients for a nutritious and energizing snack.

Ingredients

  • 1 cup raw carrots, shredded
  • 10 medjool dates, pitted and halved
  • 1/2 cup raw pecans
  • 1/2 cup raw walnuts
  • 1/2 cup rolled oats
  • 2 tbsp chia seeds
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • Sprinkle of sea salt
  • Shredded coconut to cover
  • Plain Greek yogurt (for serving)
  • Creamy peanut butter (for serving)

Instructions

  1. Wash and peel 1 to 2 carrots depending on size. Roughly chop the carrots and process them in a food processor to shred them finely. Transfer the shredded carrots to a large mixing bowl.
  2. Halve and pit the medjool dates. In the food processor, combine the dates, pecans, walnuts, ground cinnamon, ground ginger, and a sprinkle of sea salt. Pulse until the nuts are broken down into tiny pieces.
  3. Add the mixture to the bowl with the shredded carrots.
  4. Add the rolled oats and chia seeds, mixing thoroughly. If the mixture seems dry, add water as needed.
  5. Scoop about 1 tablespoon of the mixture and roll it into a ball, roughly the size of a ping-pong ball.
  6. If desired, roll each ball in shredded coconut.
  7. Arrange the energy bites on a baking sheet and freeze them for at least 30 minutes.
  8. Store any leftovers in an airtight container in the fridge for about a week or in the freezer for up to three months.

Notes

These energy bites can be served with plain Greek yogurt or creamy peanut butter for additional flavor and protein. Adjust nuts and spices to taste.
