Delicious and nutritious no-bake energy bites made with carrots, dates, nuts, and oats, perfect for a quick snack or dessert.
Ingredients

- 1 cup raw carrots, shredded
- 10 medjool dates, pitted and halved
- 1/2 cup raw pecans
- 1/2 cup raw walnuts
- 1/2 cup rolled oats
- 2 tbsp chia seeds
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- Sprinkle of sea salt
- Shredded coconut to cover
- Plain Greek yogurt (for serving)
- Creamy peanut butter (for serving)
Instructions
- Wash and peel 1 to 2 carrots depending on size. Roughly chop the carrots and process them in a food processor to shred them finely.
- Transfer the shredded carrots to a large mixing bowl.
- Halve and pit the medjool dates. In the food processor, combine the dates, pecans, walnuts, ground cinnamon, ground ginger, and a sprinkle of sea salt. Pulse until the nuts are broken down into tiny pieces.
- Add the mixture to the bowl with the shredded carrots.
- Add the rolled oats and chia seeds, mixing thoroughly. If the mixture seems dry, add water as needed.
- Scoop about 1 tablespoon of the mixture and roll it into a ball, roughly the size of a ping-pong ball. If desired, roll each ball in shredded coconut.
- Arrange the energy bites on a baking sheet and freeze them for at least 30 minutes.
- Store any leftovers in an airtight container in the fridge for about a week or in the freezer for up to three months.
Notes
For a sweeter taste, add honey or maple syrup. Use pre-shredded carrots to save time.
