Ingredients

- 1 cup cooked chicken, shredded
- 1 cup cottage cheese
- 1 cup fresh blackberries
- 1/4 cup celery, diced
- 1/4 cup red onion, diced
- 1 tablespoon honey or maple syrup
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Lettuce leaves for serving
Instructions
- In a mixing bowl, combine the shredded chicken, cottage cheese, blackberries, celery, and red onion.
- In a small bowl, whisk together the honey (or maple syrup) and lemon juice.
- Pour the dressing over the chicken mixture and stir gently to combine.
- Season with salt and pepper to taste.
- Serve on lettuce leaves or in a wrap.
Notes
Use leftover chicken or rotisserie chicken to save time. Experiment with different berries for variety. Adjust sweetness by adding more or less honey or maple syrup as per taste.
