Description

A fresh and simple salad packed with protein from bacon and optional chicken, mixed with crunchy cauliflower, tomatoes, and greens, all coated in a creamy dressing.


Ingredients

  • 1 head of cauliflower, chopped
  • 4 slices of bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 4 cups mixed greens
  • 1 cup cooked chicken, shredded (optional)
  • 1/4 cup mayonnaise
  • 1 tablespoon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cauliflower, bacon, cherry tomatoes, red onion, and mixed greens.
  2. In a small bowl, mix together the mayonnaise, mustard, salt, and pepper.
  3. Pour the dressing over the salad and toss to coat.
  4. If using, add the cooked chicken and mix gently.
  5. Serve immediately or refrigerate until ready to serve.

Notes

Store in an airtight container in the fridge for up to 2 days. Keep dressing separate if you want the cauliflower and greens firmer.
