Description

A delicious and nutritious salad that combines the flavors of jalapeno poppers with chicken, packed with protein from chicken and Greek yogurt.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cucumber, diced
  • 1/2 cup jalapenos, diced
  • 1/4 cup green onions, chopped
  • 1/4 cup cooked bacon, crumbled
  • 4 oz cream cheese, softened
  • 1/2 cup plain Greek yogurt
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked chicken, cucumber, jalapenos, green onions, and bacon.
  2. In a separate bowl, mix the cream cheese and Greek yogurt until smooth. Season with salt and pepper.
  3. Pour the dressing over the chicken mixture and stir until well combined.
  4. Chill in the refrigerator for at least 30 minutes before serving.
