- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/2 cup pepperoncini peppers
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Low-carb croutons (optional)
Instructions
- In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red onion, black olives, and pepperoncini.
- In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Top with grated Parmesan cheese and low-carb croutons if using.
- Serve immediately.
Notes
Use very cold lettuce for crunch, and taste the dressing to adjust salt or vinegar. Great served beside pasta or grilled chicken.
