Description

A delicious and easy side dish featuring sweet and tangy Honey Balsamic Roasted Carrots, perfect for both weeknight dinners and special occasions.


Ingredients

  • 1 lb. carrots, washed & peeled (or unpeeled)
  • 1 Tbsp avocado oil (or olive oil)
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp honey
  • 2 garlic cloves, minced
  • 1 tsp dried thyme
  • ¼ tsp salt
  • Cracked black pepper, to taste
  • ¼ cup goat cheese, crumbled (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice both ends off your carrots and cut them diagonally into thirds or roughly 1½ inch pieces.
  3. In a large bowl, whisk together 1 tablespoon of balsamic vinegar, 1 tablespoon of honey, and the oil.
  4. Pour this mixture over the carrots. Add minced garlic, dried thyme, salt, and cracked black pepper, and toss until well coated.
  5. Spread the carrots on the prepared pan and reserve the liquid in your bowl.
  6. Roast for 20-25 minutes until tender, brushing the reserved liquid over the carrots during the last 5-10 minutes.
  7. Once done, mix the remaining balsamic vinegar with honey and drizzle this over the roasted carrots.
  8. Adjust the seasonings as needed and serve immediately, optionally sprinkling with goat cheese.

Notes

For a vegan option, simply omit the goat cheese. You can also add red pepper flakes for heat or fresh herbs for added freshness.
