Description
A delicious and easy side dish featuring sweet and tangy Honey Balsamic Roasted Carrots, perfect for both weeknight dinners and special occasions.

- 1 lb. carrots, washed & peeled (or unpeeled)
- 1 Tbsp avocado oil (or olive oil)
- 2 Tbsp balsamic vinegar
- 2 Tbsp honey
- 2 garlic cloves, minced
- 1 tsp dried thyme
- ¼ tsp salt
- Cracked black pepper, to taste
- ¼ cup goat cheese, crumbled (optional)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice both ends off your carrots and cut them diagonally into thirds or roughly 1½ inch pieces.
- In a large bowl, whisk together 1 tablespoon of balsamic vinegar, 1 tablespoon of honey, and the oil.
- Pour this mixture over the carrots. Add minced garlic, dried thyme, salt, and cracked black pepper, and toss until well coated.
- Spread the carrots on the prepared pan and reserve the liquid in your bowl.
- Roast for 20-25 minutes until tender, brushing the reserved liquid over the carrots during the last 5-10 minutes.
- Once done, mix the remaining balsamic vinegar with honey and drizzle this over the roasted carrots.
- Adjust the seasonings as needed and serve immediately, optionally sprinkling with goat cheese.
Notes
For a vegan option, simply omit the goat cheese. You can also add red pepper flakes for heat or fresh herbs for added freshness.
