This Keto Cajun Cabbage Jambalaya Skillet is a flavorful, low-carb one-pan dinner using cabbage instead of rice.

- 1 small head of cabbage, chopped
- 1 pound Andouille sausage, sliced
- 1 can diced tomatoes (14.5 oz), drained
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and garlic; sauté until softened.
- Add Andouille sausage and cook until browned.
- Stir in the chopped cabbage, diced tomatoes, and Cajun seasoning.
- Cook until the cabbage is tender, about 10-15 minutes.
- Season with salt and pepper to taste.
- Serve hot.
Notes
Add a wedge of lemon or fresh parsley for garnish. Pairs well with a side salad or steamed green beans.
