- 1 small head of cabbage, chopped
- 8 oz Andouille sausage, sliced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp Cajun seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the sausage and cook until browned.
- Add the onion, bell pepper, and garlic, cooking until softened.
- Stir in the chopped cabbage and cook until tender.
- Add the diced tomatoes and Cajun seasoning, mixing well.
- Season with salt and pepper to taste.
- Cook for an additional 5-10 minutes until everything is heated through.
- Serve hot.
Notes
For best flavor, use a good quality Andouille sausage. You can top with chopped green onion or fresh parsley. A squeeze of lemon brightens the flavor.
