Description

A delicious low-carb twist on classic flavors, combining chicken, ham, and Swiss cheese in keto-friendly tortillas.


Ingredients

  • 2 cups cooked shredded chicken
  • 4 large tortillas (keto-friendly)
  • 4 slices of ham
  • 4 slices of Swiss cheese
  • 1 cup heavy cream
  • 1 cup shredded Swiss cheese (for topping)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil (for greasing pan)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the shredded chicken, ham, garlic powder, onion powder, salt, and pepper.
  3. Lay out the tortillas and fill each with the chicken mixture and a slice of Swiss cheese. Roll them up and place in a greased baking dish.
  4. In a saucepan, heat the heavy cream until warm, then stir in the shredded Swiss cheese until melted and smooth.
  5. Pour the cheese sauce over the enchiladas in the baking dish.
  6. Sprinkle additional shredded Swiss cheese on top.
  7. Bake in the preheated oven for 20-25 minutes until bubbly and golden.
  8. Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Can be frozen before baking.
