Rich, creamy, low-carb bars that blend chocolate and peanut butter in a decadent treat.


Ingredients

  • 1 cup almond flour
  • 1/4 cup butter, melted
  • 2 tbsp erythritol (or preferred sweetener)
  • 1 cup cream cheese, softened
  • 1/2 cup peanut butter
  • 1/2 cup heavy whipping cream
  • 1/4 cup cocoa powder
  • 1/2 cup powdered erythritol (for sweetening the cheesecake layer)
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. Mix almond flour, melted butter, and 2 tbsp erythritol to form the crust. Press into the bottom of the dish.
  3. Beat cream cheese, peanut butter, heavy cream, powdered erythritol, cocoa powder, vanilla extract, and salt until smooth.
  4. Pour the cheesecake mixture over the crust and spread evenly.
  5. Bake for 25-30 minutes or until set.
  6. Cool and then refrigerate for at least 2 hours before slicing into bars.
  7. Serve chilled and enjoy your low-carb dessert!

Notes

For firmer texture, consider chilling longer. Use room-temperature ingredients for best results.
