- 1/4 cup unsweetened cocoa powder
- 2–3 tablespoons sweetener of choice (e.g., erythritol, stevia)
- 1 teaspoon vanilla extract
- 1/4 cup dark chocolate chips (sugar-free)
- Pinch of salt
Instructions
- In a mixing bowl, combine the cottage cheese, cocoa powder, sweetener, vanilla extract, and salt. Blend until smooth.
- Stir in the dark chocolate chips.
- Line a baking sheet with parchment paper.
- Spread the mixture evenly onto the baking sheet.
- Freeze for at least 120-180 minutes or until firm.
- Once frozen, break into pieces and enjoy!
Notes
Serve straight from the freezer or let pieces sit for a minute to soften slightly. Keep in an airtight container or zip bag in the freezer with parchment between layers.
