- 1 cup orzo pasta
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced

- 3 cloves garlic, minced
- 1 lemon, juiced and zested

- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil over medium heat in a large pot. Add onion, garlic, carrots, and celery; sauté until softened.
- Add the chicken breast and chicken broth; bring to a boil.
- Reduce heat and simmer for about 15-20 minutes, until chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the orzo, lemon juice, and zest. Cook until orzo is tender, about 8-10 minutes.
- Season with salt and pepper.
- Serve hot, garnished with fresh parsley.
