Lemon Garlic Butter Chicken Baked with Asparagus

  • 4 boneless, skinless chicken breasts (about 1.5 lbs/680g)
  • 1 bunch asparagus, trimmed
  • 3 tbsp butter, melted
  • 3 garlic cloves, minced
  • 2 tbsp fresh lemon juice (about 1 lemon)
  • 1 tsp lemon zest
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the chicken breasts in a single layer on a baking sheet.
  3. In a small bowl, combine the melted butter, minced garlic, lemon juice, lemon zest, olive oil, oregano, paprika, salt, and pepper.
  4. Brush the garlic butter mixture over the chicken breasts, ensuring each piece is well coated.
  5. Add the asparagus around the chicken on the baking sheet, drizzling it with a bit of olive oil, and seasoning with salt and pepper.
  6. Bake in the preheated oven for about 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the asparagus is tender.
  7. Garnish the dish with fresh parsley before serving.

Notes

To store leftovers, let the chicken and asparagus cool completely, then place them in an airtight container and refrigerate for 3-4 days. Can be frozen in a freezer-safe container for up to 2-3 months.
