This quick one-pan dish features juicy chicken and tender asparagus roasted with lemon and garlic, making it a flavorful weeknight meal.

- 4 boneless, skinless chicken breasts (about 1.5 lbs/680g)
- 1 bunch asparagus, trimmed
- 3 tbsp butter, melted
- 3 garlic cloves, minced
- 2 tbsp fresh lemon juice (about 1 lemon)
- 1 tsp lemon zest
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and pepper, to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Place the chicken breasts in one layer on a baking sheet.
- In a small bowl, mix the melted butter, minced garlic, lemon juice, lemon zest, olive oil, oregano, paprika, salt, and pepper.
- Brush the garlic butter mix over each chicken breast so they are well coated.
- Add the asparagus around the chicken on the baking sheet. Drizzle the asparagus with a little olive oil and season with salt and pepper.
- Bake for 25–30 minutes, or until the chicken reaches 165°F (75°C) and the asparagus is tender.
- Garnish with fresh parsley if desired and serve.
Notes
Pound chicken to even thickness for even cooking. For a quick swap, use pre-cooked chicken and roast asparagus only.
