Delicious low carb cherry cheesecake cups that are creamy and perfect for sharing, with no baking required.
Ingredients

- 1 cup cream cheese, softened
- 1/2 cup powdered erythritol (or other low-carb sweetener)
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 cup fresh cherries, pitted and halved
- 1 tablespoon lemon juice
- 1/4 teaspoon almond extract (optional)
Instructions
- In a mixing bowl, beat the softened cream cheese with the powdered erythritol and vanilla extract until smooth.
- In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until combined.
- In a separate bowl, toss the fresh cherries with lemon juice and, if desired, almond extract.
- Layer the cheesecake mixture and cherry mixture in individual cups or bowls.
- Refrigerate for at least 2 hours before serving to allow the flavors to meld.
Notes
Chill for at least 2 hours so flavors meld and the cups set. Keep the cups covered in the fridge for up to 3 days. Do not freeze.
