Ingredients

- 1 head of romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup Parmesan cheese, grated
- Low carb croutons (store-bought or homemade)
- Olive Garden salad dressing (low carb version)
Instructions
- In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red onion, and black olives.
- Add the feta cheese and Parmesan cheese on top.
- Toss the salad gently to mix all the ingredients.
- Top with low carb croutons.
- Drizzle the low carb Olive Garden dressing over the salad and toss again before serving.
Notes
Serve cold on a plate or in a bowl. Offer extra dressing on the side. Add grilled chicken or shrimp for more protein.
