- 1/2 cup unsweetened almond milk
- 1/4 cup erythritol or sweetener of choice
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Combine the cottage cheese, almond milk, erythritol, vanilla extract, and salt in a blender. Blend until smooth.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- If you do not have an ice cream maker, pour the mixture into a shallow dish and freeze for about 1-2 hours, stirring every 30 minutes until it is the desired consistency.
- Serve immediately or store in the freezer in an airtight container.
Notes
For best results, use full-fat cottage cheese for a richer taste, and add fresh berries or nuts when serving.
