Ingredients

  • 1 bunch asparagus, trimmed
  • 2 cups butternut squash, cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the cubed butternut squash with olive oil, salt, and pepper.
  3. Spread the butternut squash on a sheet pan.
  4. Place the ham on the sheet pan.
  5. Arrange the asparagus around the ham and squash, drizzling with any remaining oil and seasoning as desired.
  6. Bake for 25-30 minutes, or until the ham is heated through and the vegetables are tender.

Notes

Cut squash into even cubes for uniform cooking. Trim asparagus ends for better roasting. Use a rimmed sheet pan to catch juices.
