- 8 oz pasta (penne or fettuccine)
- 1 lb chicken breast, cut into bite-sized pieces
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add chicken pieces and season with salt, pepper, and Italian seasoning. Cook until golden and cooked through, about 6-8 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Pour in chicken broth and bring to a simmer.
- Reduce heat and stir in heavy cream and parmesan cheese until the sauce thickens.
- Add the cooked pasta to the skillet and toss to coat in the sauce.
- Garnish with fresh parsley before serving.
Notes
Cut chicken into even pieces for even cooking. Use freshly grated parmesan for the best texture. Avoid boiling the cream to prevent separation.
