Ingredients

- 2 cups pulled pork
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 cup enchilada sauce
- 2 cups shredded cheese (cheddar or Mexican blend)
- 8 small corn tortillas
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the pulled pork, black beans, corn, diced tomatoes, enchilada sauce, cumin, chili powder, salt, and pepper.
- In a baking dish, layer 4 tortillas on the bottom.
- Spread half of the pork mixture over the tortillas, and sprinkle half of the cheese on top.
- Repeat the layers with the remaining tortillas, pork mixture, and cheese.
- Cover with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Let cool for a few minutes before serving.
Notes
Serve hot with a side of salad, tacos, or tortilla chips. Add sour cream or guacamole for extra flavor. Adjust spice levels and customize with additional ingredients if desired.
