Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Chopped cilantro for garnish
  • Avocado and lime wedges for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and cook until softened.
  3. Stir in garlic and bell pepper, cooking for an additional 2 minutes.
  4. Add ground turkey and cook until browned.
  5. Stir in diced tomatoes, black beans, taco seasoning, and season with salt and pepper.
  6. Cook for 5-7 minutes until everything is heated through.
  7. Garnish with chopped cilantro and serve with avocado and lime wedges.

Notes

Use lean ground turkey for a lower fat dish and adjust taco seasoning to taste.
