Description

A simple and cold Mint Chocolate Chip No Churn Ice Cream that requires no ice cream maker, perfect for a quick treat.


Ingredients

Scale
  • 1 cup heavy cream
  • 1 cup unsweetened almond milk
  • 3/4 cup erythritol (or preferred sweetener)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/2 cup sugar-free chocolate chips
  • Green food coloring (optional)

Instructions

  1. In a large bowl, whisk together heavy cream, almond milk, erythritol, vanilla extract, and peppermint extract until well combined.
  2. If desired, add a few drops of green food coloring for color.
  3. Fold in the sugar-free chocolate chips.
  4. Pour the mixture into a loaf pan or an airtight container.
  5. Freeze for at least 240 minutes, or until completely set.
  6. Scoop and serve for a tasty low carb treat!

Notes

Use cold heavy cream for better whips. Do not overmix after adding chocolate chips to prevent sinking.
