A simple and cold Mint Chocolate Chip No Churn Ice Cream that requires no ice cream maker, perfect for a quick treat.
Ingredients

- 1 cup heavy cream
- 1 cup unsweetened almond milk
- 3/4 cup erythritol (or preferred sweetener)
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1/2 cup sugar-free chocolate chips
- Green food coloring (optional)
Instructions
- In a large bowl, whisk together heavy cream, almond milk, erythritol, vanilla extract, and peppermint extract until well combined.
- If desired, add a few drops of green food coloring for color.
- Fold in the sugar-free chocolate chips.
- Pour the mixture into a loaf pan or an airtight container.
- Freeze for at least 240 minutes, or until completely set.
- Scoop and serve for a tasty low carb treat!
Notes
Use cold heavy cream for better whips. Do not overmix after adding chocolate chips to prevent sinking.
