- 2 delicata squashes
- 3 tablespoons miso paste
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
- Salt and pepper to taste
- Chopped green onions for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the delicata squashes in half lengthwise and scoop out the seeds. Slice each half into rings about 1/2 inch thick.
- In a bowl, whisk together miso paste, olive oil, maple syrup, salt, and pepper.
- Toss the squash rings in the miso mixture until well coated.
- Arrange the rings on a baking sheet in a single layer.
- Roast in the preheated oven for 20-25 minutes, flipping halfway through, until tender and lightly browned.
- Remove from the oven and transfer to a serving platter.
- Garnish with chopped green onions if desired and serve warm.
Notes
Slice the rings evenly for consistent cooking. Store leftovers in an airtight container for up to 3 days.
