Ingredients

  • 2 delicata squashes
  • 3 tablespoons miso paste
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the delicata squashes in half lengthwise and scoop out the seeds. Slice each half into rings about 1/2 inch thick.
  3. In a bowl, whisk together miso paste, olive oil, maple syrup, salt, and pepper.
  4. Toss the squash rings in the miso mixture until well coated.
  5. Arrange the rings on a baking sheet in a single layer.
  6. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until tender and lightly browned.
  7. Remove from the oven and transfer to a serving platter.
  8. Garnish with chopped green onions if desired and serve warm.
