Ingredients

  • 4 eggs
  • 1 cup mushrooms, chopped
  • 1 cup mixed vegetables (e.g., bell peppers, spinach, onion)
  • 1 cup shredded cheese (e.g., cheddar, mozzarella)
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter
  • Fresh herbs (e.g., parsley, chives) for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil or butter over medium heat. Add chopped mushrooms and mixed vegetables; sauté until tender, about 5-7 minutes.
  3. In a large bowl, whisk together the cottage cheese and eggs until well combined.
  4. Stir in the sautéed vegetables and half of the shredded cheese. Season with salt and pepper.
  5. Pour the mixture into a greased baking dish. Top with the remaining shredded cheese.
  6. Bake for 30-35 minutes, or until the egg is set and the top is golden.
  7. Allow to cool slightly, garnish with fresh herbs, and serve.
