No-Bake Cheesecake Parfaits

Description

Simple, creamy no-bake cheesecake parfaits with cherry topping that are fast to make and perfect for any occasion.


Ingredients

  • 1 ½ cups finely crushed graham cracker crumbs
  • 3 tablespoons granulated sugar
  • 7 tablespoons melted butter
  • 1 8-ounce package cream cheese, softened
  • 1 14-ounce can sweetened condensed milk
  • ⅓ cup freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • 1 21-ounce can cherry pie filling

Instructions

  1. In a small mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well and set aside.
  2. In a medium mixing bowl, beat the softened cream cheese until smooth.
  3. Add sweetened condensed milk and beat until combined.
  4. Stir in lemon juice and vanilla extract.
  5. Set 6 cups on the counter or a cookie sheet.
  6. Scoop 2 tablespoons of the crumb mixture into the bottom of each cup and press down lightly.
  7. Add 3 tablespoons of the cheesecake mixture to each cup and spread evenly.
  8. Distribute half of the cherry pie filling between the cups.
  9. Sprinkle 2 tablespoons of crumb mixture over the cherry layer.
  10. Divide the remaining cheesecake mixture between the cups and spread evenly.
  11. Top with remaining cherry pie filling and a sprinkle of crumb mixture.
  12. Serve immediately or chill for up to 24 hours.

Notes

For best texture, serve chilled and consider adding whipped cream or garnishing with fresh cherries or mint leaves.
