Description

A refreshing and light alternative to traditional pasta salads, made with zucchini noodles and vibrant vegetables.


Ingredients

Scale
  • 2 cups zucchini noodles
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large bowl, combine the zucchini noodles, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  2. In a small bowl, whisk together the olive oil and red wine vinegar.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Season with salt and pepper to taste.
  5. Garnish with fresh basil before serving.

Notes

Store any leftovers in an airtight container in the refrigerator. Can last 2-3 days, but may release water over time.
