Ingredients

- 2 cups zucchini noodles
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, diced
- 1/4 cup olives, sliced
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large bowl, combine the zucchini noodles, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- In a small bowl, whisk together the olive oil and red wine vinegar.
- Drizzle the dressing over the salad and toss gently to combine.
- Season with salt and pepper to taste.
- Garnish with fresh basil before serving.
Notes
Store any leftovers in an airtight container in the refrigerator. Can last 2-3 days, but may release water over time.
