- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- Cooking spray or additional butter for the skillet
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the buttermilk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined (lumps are okay).
- Heat a skillet over medium heat and coat with cooking spray or butter.
- Pour 1/4 cup of batter for each pancake onto the skillet and cook until bubbles form on the surface, about 2-3 minutes.
- Flip and cook until golden brown, about another 2-3 minutes.
- Serve warm with syrup, butter, or your favorite toppings.
Notes
Don’t overmix the batter; it’s okay if there are some lumps. Ensure the skillet is hot enough before adding the batter.
