- 2 cups cherry tomatoes, halved
- 8 ounces fresh mozzarella, cubed
- 1 cup fresh basil leaves, chopped

- Balsamic glaze for drizzling (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large baking dish, drizzle olive oil and lay the chicken breasts flat.
- Season with garlic powder, salt, and pepper.
- Layer the halved cherry tomatoes, mozzarella cubes, and chopped basil over the chicken.
- Drizzle with additional olive oil if desired.
- Bake in the preheated oven for about 25-30 minutes or until the chicken is cooked through and no longer pink.
- For added flavor, drizzle balsamic glaze over the top before serving.
Notes
Use chicken thighs for a juicier option. Add extra veggies like spinach or zucchini for more color and nutrients. For a kick, sprinkle some crushed red pepper flakes on top before baking.
