Oreo Cheesecake Bites

Delightful Oreo Cheesecake Bites combine rich cheesecake with the crunch of Oreos, perfect for parties or as a quick snack.

  • 16 Oreos
  • 16 ounces cream cheese; softened (28 ounce packages)
  • 1/2 cup sugar
  • 2 whole eggs
  • 1 tsp. vanilla extract
  • 3/4 cup large and small Oreo cookie crumbs (reserve a few tablespoons for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a cupcake baking pan with 16 paper liners and place one Oreo cookie in each liner.
  2. In a large mixing bowl, beat together the cream cheese, sugar, eggs, and vanilla extract for 2-3 minutes until smooth.
  3. Sprinkle in the Oreo cookie crumbs and fold in until combined.
  4. Spoon the Oreo cheesecake mixture evenly on top of the Oreo cookies, about two tablespoons per cupcake liner.
  5. Sprinkle each cheesecake with more Oreo cookie crumbs.
  6. Bake for 14-16 minutes or until the middles are set. Let cool for at least 30 minutes before removing paper wrappers.
  7. Refrigerate for 2 hours before serving. Optional: top with whipped cream and more crushed Oreos.

Notes

Ensure cream cheese is softened for a smoother batter. Do not over-bake; the middles should be slightly jiggly.
