Pear and Cinnamon Doughnut Muffins

Delightful muffins combining ripe pears and cinnamon, perfect for breakfast or a sweet snack.

Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon (plus extra for topping)
  • 1 cup diced ripe pears (about 2 medium pears)
  • 2 large eggs
  • ½ cup whole milk
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, beat the eggs and milk until frothy. Gently fold in diced pears.
  4. Combine wet ingredients into dry ingredients until just mixed; avoid overmixing.
  5. Fill muffin cups two-thirds full and sprinkle with cinnamon sugar if desired.
  6. Bake for 18-20 minutes until golden brown and a toothpick comes out clean.

Notes

Best served warm, optionally with butter. Store in an airtight container at room temperature for up to three days, or freeze for longer storage.
