Pumpkin Bread – Rich and Buttery

  • 1 2/3 cup All Purpose Flour
  • 1 1/4 cup granulated sugar
  • 1 cup pumpkin puree (not pumpkin pie puree)
  • 1/2 cup softened unsalted butter
  • 1/2 cup warm milk
  • 2 large eggs (room temperature)
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp nutmeg
  • 1/4 tsp kosher salt (or 1/8 tsp of table salt)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a round cake or loaf pan.
  2. In a bowl, combine the flour, spices, salt, baking powder, and baking soda and set aside.
  3. In another bowl, cream together the butter and sugar with a hand mixer on high speed until fluffy, about 2 minutes.
  4. Add the eggs and mix well until incorporated.
  5. Add the pumpkin and vanilla and mix until combined.
  6. Gradually add the dry ingredients from the first bowl, mixing by hand just until combined.
  7. Add the warm milk and mix well into the batter.
  8. Pour the batter into the prepared pan.
  9. Bake for 45-50 minutes for a cake pan or 50-55 minutes for a loaf pan, or until a toothpick inserted in the center comes out clean.
  10. Remove from oven and let cool for 15 minutes, then carefully loosen from the pan.
  11. Invert the pan and let cool for another 15 minutes. Serve warm or at room temperature.

Notes

Serve warm with butter or cream cheese. Pairs well with tea or coffee. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
