Pumpkin Bread

A moist and flavorful pumpkin bread perfect for fall, easy to make with common ingredients.

  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together pumpkin puree, vegetable oil, and sugar until well combined.
  3. Beat in the eggs one at a time.
  4. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in nuts if using.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  9. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For extra moist bread, do not overmix when combining wet and dry ingredients.
