Quick Christmas Stuffed Beef Tenderloin

A festive and impressive dish featuring tender beef stuffed with a creamy spinach filling, perfect for holiday gatherings.

  • 1 Beef tenderloin
  • 2 cups Spinach
  • 8 oz Cream cheese
  • 3 cloves Garlic
  • 1 cup Breadcrumbs
  • 1/2 cup Parmesan cheese
  • Salt to taste
  • Pepper to taste
  • 2 tbsp Olive oil
  • Herbs (such as thyme or rosemary)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, sauté garlic until fragrant, then add spinach and cook until wilted.
  3. In a bowl, combine cooked spinach, cream cheese, breadcrumbs, Parmesan cheese, salt, and pepper.
  4. Cut a pocket into the beef tenderloin and stuff it with the spinach mixture.
  5. Rub olive oil and herbs over the outside of the tenderloin.
  6. Sear the tenderloin in a hot skillet for 2-3 minutes on each side until browned.
  7. Transfer to the oven and roast for about 20-25 minutes, or until desired doneness.
  8. Let rest before slicing and serving.
