A fast and flavorful beef tenderloin recipe with a cheesy spinach center, perfect for holiday meals.

- 1 beef tenderloin
- 2 cups spinach
- 4 oz cream cheese
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup Parmesan cheese, grated
- Salt, to taste
- Pepper, to taste
- 2 tbsp olive oil
- Fresh herbs (such as thyme or rosemary)
Instructions
- Preheat the oven to 375°F (190°C).
- Sauté garlic in a skillet until fragrant, then add spinach and cook until wilted.
- In a bowl, combine cooked spinach, cream cheese, breadcrumbs, Parmesan cheese, salt, and pepper.
- Cut a pocket into the beef tenderloin and stuff it with the spinach mixture.
- Rub olive oil and herbs over the outside of the tenderloin.
- Sear the tenderloin in a hot skillet for 2-3 minutes on each side until browned.
- Transfer to the oven and roast for about 20-25 minutes, or until desired doneness.
- Let rest before slicing and serving.
Notes
Use room-temperature beef for even cooking. Do not overfill the pocket. Sear on high heat for a good crust before roasting. Let the roast rest 10-15 minutes after cooking.
