Description

A fast and flavorful beef tenderloin recipe with a cheesy spinach center, perfect for holiday meals.


Ingredients

  • 1 beef tenderloin
  • 2 cups spinach
  • 4 oz cream cheese
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup Parmesan cheese, grated
  • Salt, to taste
  • Pepper, to taste
  • 2 tbsp olive oil
  • Fresh herbs (such as thyme or rosemary)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté garlic in a skillet until fragrant, then add spinach and cook until wilted.
  3. In a bowl, combine cooked spinach, cream cheese, breadcrumbs, Parmesan cheese, salt, and pepper.
  4. Cut a pocket into the beef tenderloin and stuff it with the spinach mixture.
  5. Rub olive oil and herbs over the outside of the tenderloin.
  6. Sear the tenderloin in a hot skillet for 2-3 minutes on each side until browned.
  7. Transfer to the oven and roast for about 20-25 minutes, or until desired doneness.
  8. Let rest before slicing and serving.

Notes

Use room-temperature beef for even cooking. Do not overfill the pocket. Sear on high heat for a good crust before roasting. Let the roast rest 10-15 minutes after cooking.
