Ingredients

- 2 cups shredded coconut
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Melt the dark chocolate chips and coconut oil together in a microwave-safe bowl, stirring until smooth.
- Remove from the microwave and stir in the shredded coconut, vanilla extract, and salt until well combined.
- Scoop tablespoon-sized clusters onto a parchment-lined baking sheet.
- Refrigerate for about 30 minutes, or until set.

Keep clusters in an airtight box. Store in the fridge for up to 2 weeks or freeze for up to 2 months.
