- 1 cup cooked corned beef, chopped
- 1 cup sauerkraut, drained
- 1 cup Swiss cheese, shredded
- 1/4 cup thousand island dressing
- 1 cup lettuce, shredded
- Pepper, to taste
Instructions
- Chop cooked corned beef into bite-size pieces.
- Drain sauerkraut well so the bowl does not get soggy.
- Layer corned beef, sauerkraut, and cheese in a bowl.
- Add shredded lettuce and a drizzle of dressing.
- Top with pepper to taste and serve.
Notes
Serve right after adding the dressing for crisp lettuce. Store leftovers in an airtight container for up to 2 days.
