Description

A quick, easy bowl version of the Reuben sandwich without the bread, perfect for a fast, filling meal.


Ingredients

  • 1 cup cooked corned beef, chopped
  • 1 cup sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 1/4 cup thousand island dressing
  • 1 cup lettuce, shredded
  • Pepper, to taste

Instructions

  1. Chop cooked corned beef into bite-size pieces.
  2. Drain sauerkraut well so the bowl does not get soggy.
  3. Layer corned beef, sauerkraut, and cheese in a bowl.
  4. Add shredded lettuce and a drizzle of dressing.
  5. Top with pepper to taste and serve.

Notes

Serve right after adding the dressing for crisp lettuce. Store leftovers in an airtight container for up to 2 days.
