Quick and Easy Shepherd’s Pie

A comforting and savory dish featuring ground beef, vegetables, and creamy mashed potatoes, perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 1 cup frozen mixed vegetables
  • 4 cups mashed potatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until soft.
  3. Add the ground beef and cook until browned. Drain excess fat.
  4. Stir in the frozen mixed vegetables, beef broth, and Worcestershire sauce. Season with salt and pepper. Simmer for about 5 minutes.
  5. Spread the beef and vegetable mixture in a baking dish.
  6. Top with mashed potatoes, spreading evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
  8. Let it cool slightly before serving.

Notes

Serve hot, with options for salad or crusty bread. Leftovers can be refrigerated for 3-4 days.
